Pear and Walnut Salad Recipe (15 Minute)

Ingredients

  • 10 oz baby arugula
  • 1/2 cup roasted walnuts
  • 2 large pears
  • 2 oz goat cheese
  • 1 cup pomegranate arils
Balsamic Dressing
  • 2 tbsp honey
  • 2 tbsp Dijon mustard
  • 4 tbsp olive oil
  • 4 tbsp balsamic vinegar

Instructions

  1. Combine the honey with dijon mustard, balsamic vinegar, and olive oil. Mix until well-blended. 
Assembling Salad
  1. Cut pears into slices. Chop the roasted walnuts and crumble the goat cheese into small pieces. 
  2. Place the arugula in a large bowl. Top with pear slices, walnuts, cheese, and pomegranate arils.
  3. Drizzle the salad with dressing and toss together. Enjoy!
