Ingredients

  • 3 tablespoons unsalted butter
  • 1 clove garlic minced
  • 3 medium carrots peeled and sliced
  • 1/3 cup water
  • 2 cups frozen peas thawed
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. In a large skillet over medium-high heat, melt the butter and add the garlic. Cook until garlic is golden and fragrant.
  2. Add the sliced carrots, water, and a pinch of salt. Bring to a simmer, then reduce heat, cover, and simmer until carrots are tender, about 5 minutes.
  3. Stir in the peas and continue cooking until heated through, about 5 minutes longer, adding more water during cooking if needed.
  4. Season to taste with salt and freshly ground black pepper. When serving, sprinkle with fresh parsley for garnish.
