Pecan Cornmeal Muffin

With added pecan meal, Pecan Cornmeal Muffins are sweet with a hint of crunch and nuttiness. Perfect as a snack or a side with soup.

Ingredients

  • 2/3 cup flour
  • 2/3 cup ground pecans
  • 2/3 cup yellow cornmeal
  • 1/2 cup sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs beaten
  • 1/2 cup buttermilk
  • 1/2 cup butter melted
  • 1/2 cup Chopped Pecans optional

Instructions

  1. Preheat oven to 375*F. Grease muffin pan or line with paper baking cups
  2. In a medium bowl mix together dry ingredients. In another bowl, combine eggs, buttermilk, and melted butter. Add to dry ingredients and stir until just moistened. Fold in additional chopped pecans if using.
  3. Fill muffin cups 3/4 full. Bake for 18-20 minutes or until golden. Enjoy!

Notes

  • May also be baked in a 9” square baking pan for about 20-25 minutes for pecan cornbread.
