Ingredients

  • 1 cup Chopped Pecans
  • 1 box 8 oz yellow cake mix
  • ½ cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1 cup light corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup heavy cream

Instructions

    Cup of Yum
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with butter or non-stick spray.
  3. In a large bowl, whisk together the brown sugar, corn syrup, eggs, vanilla extract, and salt until smooth.
  4. Stir in the chopped pecans.
  5. Pour the melted butter into the prepared baking dish, then evenly sprinkle the dry cake mix over the butter. Do not stir.
  6. Pour the pecan mixture over the cake mix layer. Do not mix—just pour it over the top.
  7. Drizzle the heavy cream evenly over the cobbler.
  8. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. The center should still be slightly gooey.
  9. Let the cobbler cool slightly before serving. Serve warm with whipped cream or vanilla ice cream, if desired.

Notes

  • For a slightly different flavor, try using dark corn syrup or maple syrup in place of light corn syrup.
  • You can substitute the pecans with walnuts or other nuts if preferred.
  • For an extra indulgent dessert, drizzle some caramel sauce over the cobbler when serving.
  • Leftovers can be stored in the refrigerator for up to 2-3 days. Reheat in the microwave or oven before serving.
  • If you want a firmer cobbler topping, reduce the amount of heavy cream slightly.
  • This dessert pairs perfectly with vanilla ice cream or whipped cream for a richer experience.
