Ingredients

  • 140 g penne pasta
  • 1 teaspoon dried chili flakes
  • 3 garlic crushed, clove
  • 2 tablespoon olive oil
  • 400 g tomato canned, chopped
  • 2 tablespoon tomato puree
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 4 tablespoon basil finely chopped, fresh
  • 15 g parmesan optional

Instructions

  1. Add 140 g Penne pasta to a pan of boiling water and simmer for 12 minutes.
  2. Heat 2 tablespoon Olive oil in a frying pan and add 1 teaspoon Dried chilli flakes and 3 Garlic cloveCook on a low heat for 1-2 minutes.
  3. Add 400 g Chopped tomatoes, 2 tablespoon Tomato puree and 1 pinch Sea salt and ground black pepper to the pan and stir well and simmer until the pasta is ready.
  4. Drain the pasta (reserving a little of the water) and add to the sauce along with 4 tablespoon Fresh basil.
  5. Stir well and serve topped with 15 g Parmesan.

Notes

  • The quantity of chili flakes can be adjusted to suit milder preferences or children, balancing heat intensity.
  • Adding a teaspoon of fish sauce deepens the savory flavor but makes the dish non-vegetarian/vegan.
  • Reserve some pasta cooking water to thin and smooth the sauce if it becomes too thick.
  • Fresh spinach or other vegetables can be stirred in near the end of cooking to add color and nutrition.
