Penne Arrabbiata
Penne Arrabbiata is a spicy pasta dish featuring penne cooked al dente and tossed with a sauce made from garlic, dried chili flakes, canned chopped tomatoes, and tomato puree. Fresh basil is folded in before serving, providing herbal brightness. Optional Parmesan adds a savory, cheesy note. The sauce is simmered gently to meld flavors, creating a balanced dish with a noticeable but adjustable kick of heat.
Ingredients
- 140 g penne pasta
- 1 teaspoon dried chili flakes
- 3 garlic crushed, clove
- 2 tablespoon olive oil
- 400 g tomato canned, chopped
- 2 tablespoon tomato puree
- 1 pinch sea salt
- 1 pinch black pepper
- 4 tablespoon basil finely chopped, fresh
- 15 g parmesan optional
Instructions
- Add 140 g Penne pasta to a pan of boiling water and simmer for 12 minutes.
- Heat 2 tablespoon Olive oil in a frying pan and add 1 teaspoon Dried chilli flakes and 3 Garlic cloveCook on a low heat for 1-2 minutes.
- Add 400 g Chopped tomatoes, 2 tablespoon Tomato puree and 1 pinch Sea salt and ground black pepper to the pan and stir well and simmer until the pasta is ready.
- Drain the pasta (reserving a little of the water) and add to the sauce along with 4 tablespoon Fresh basil.
- Stir well and serve topped with 15 g Parmesan.
Notes
- The quantity of chili flakes can be adjusted to suit milder preferences or children, balancing heat intensity.
- Adding a teaspoon of fish sauce deepens the savory flavor but makes the dish non-vegetarian/vegan.
- Reserve some pasta cooking water to thin and smooth the sauce if it becomes too thick.
- Fresh spinach or other vegetables can be stirred in near the end of cooking to add color and nutrition.
