Ingredients

  • 8 oz penne pasta
  • ½ lb ground beef
  • ½ onion chopped, medium
  • 24 oz marinara sauce
  • ½ cup sour cream
  • 6 oz provolone cheese sliced
  • 4 oz mozzarella cheese shredded or sliced
  • ¼ cup Parmesan Cheese grated
  • parsley chopped

Instructions

    Cup of Yum
  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain.
  2. Meanwhile, in a large skillet, brown the ground beef. Add the onion and cook until softened. Add the spaghetti sauce and allow to simmer for 15 minutes. Stir in the sour cream. Add the drained pasta and stir to coat.
  3. Preheat the oven to 350F. Spray a 2 quart baking dish with nonstick cooking spray. Pour half of the pasta into the baking dish. Top with half of the Provolone and half of the Mozzarella. Pour the remaining pasta on top and top with the remaining Provolone and Mozzarella, and sprinkle the Parmesan on top.
  4. Bake until the cheese is melted and bubbly, about 30 minutes. Sprinkle with chopped parsley before serving.

Notes

  • Substitute half the ground beef with Italian sausage for added flavor.
  • Any short pasta shapes can be used instead of penne according to preference.
  • The dish can be assembled a day ahead and baked just before serving.
  • Freezes well assembled or baked; thaw overnight in the refrigerator before reheating.
  • Store leftovers covered in the refrigerator for 3-4 days.
  • Reheat leftovers in the microwave for individual portions; larger quantities reheat better in the oven.
