Peperoni alla leccese recipe

Ingredients

  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 green bell peppers
  • 5 tablespoons olive oil
  • 3 garlic cloves
  • 1 branch parsley
  • 30 grams Parmigiano-Reggiano
  • 20 grams breadcrumbs
  • 2 tablespoons capers
  • salt
  • pepper

Instructions

  1. Wash the peppers and remove the seeds. Then, with a good kitchen knife cut the peppers into little cubes.
  2. Sauté the pepper in olive oil in a nonstick saucepan, stirring often with the wooden spoon in medium heat
  3. After a few minutes, lower the heat and add some water. Cook for 15 minutes
  4. In a bowl, mix together the breadcrumbs, Parmigiano, capers, salt and pepper, minced garlic, and the chopped parsley.
  5. Add the mix to the bell pepper and cook in high heat for a few minutes. Allow it to cool down before serving.
