Peppermint Frosted Chocolate Brownies

Ingredients

  • 1 cup butter softened
  • 1 2/3 cups sugar
  • 1 cup brown sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/2 cup cake flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cups Semi-Sweet Chocolate Chunks or Chips
  •  
  • Chocolate Frosting:
  • 12 Tablespoons 3/4 cup Butter, softened
  • 1/2 cup cocoa powder
  • 2 1/2 cups powdered sugar
  • 2 Tablespoons heavy cream or milk
  • 1/4 teaspoon pure mint extract made add more until desired taste
  •  
  • GARNISH:
  • Crushed candy canes

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla.
  3. Stir in flour, cake flour, cocoa, and salt until mixed together.
  4. Fold in chocolate chips.
  5. Pour into 8 x 8 pan and spread evenly. May use 9 x 13 pan but the brownies will be thinner.
  6. Bake for 28-36 minutes. Check the center to see if a toothpick comes out clean.
  7. To make frosting:
  8. In a large mixing bowl, cream butter for 1 minute. Add cocoa powder and powdered sugar and whip until creamy, about 3 minutes. Add heavy cream and whip until smooth.
  9. Spread over cooled brownies.
  10. Top with crushed candy canes.
