- 1 cup butter softened
- 1 2/3 cups sugar
- 1 cup brown sugar
- 3 eggs
- 2 teaspoons vanilla
- 1 cup flour
- 1/2 cup cake flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 cups Semi-Sweet Chocolate Chunks or Chips
- Chocolate Frosting:
- 12 Tablespoons 3/4 cup Butter, softened
- 1/2 cup cocoa powder
- 2 1/2 cups powdered sugar
- 2 Tablespoons heavy cream or milk
- 1/4 teaspoon pure mint extract made add more until desired taste
- GARNISH:
- Crushed candy canes
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla.
- Stir in flour, cake flour, cocoa, and salt until mixed together.
- Fold in chocolate chips.
- Pour into 8 x 8 pan and spread evenly. May use 9 x 13 pan but the brownies will be thinner.
- Bake for 28-36 minutes. Check the center to see if a toothpick comes out clean.
- To make frosting:
- In a large mixing bowl, cream butter for 1 minute. Add cocoa powder and powdered sugar and whip until creamy, about 3 minutes. Add heavy cream and whip until smooth.
- Spread over cooled brownies.
- Top with crushed candy canes.
