Peppermint White Chocolate Cookies

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup butter softened, unsalted, sweet cream
  • 1/2 cup light brown sugar packed
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon peppermint extract pure
  • 1 ½ cups white chocolate chips
  • 1 cup Peppermint candy crushed

Instructions

  1. Preheat oven to 350.
  2. Line two baking sheets with parchment paper.
  3. In a small bowl combine flour, baking soda and salt. Set aside.
  4. In a standing mixer, beat together the butter and sugars until combined and fluffy.
  5. Beat in the egg, and peppermint extract.
  6. Gradually beat in the dry ingredients until combined.
  7. Fold in 1 C of the white chocolate chip cookies and ¾ C of the crushed peppermint candy.
  8. Using a medium ice cream scooper, scoop out some dough onto the parchment paper.
  9. Bake in the oven for for 8 minutes.
  10. Remove from oven and sprinkle on some of the remaining white chocolate chips and crushed peppermint candy.
  11. Place back into the oven for an additional 2 minutes.
  12. Remove from oven and cool completely.
  13. Enjoy!
