Pepperoni Pizza Bites

Pepperoni Pizza Bites are a like a bagel bite and pizza muffin with homemade dough, cheese & pepperoni, ready to bake in just a few minutes.

Ingredients

  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 3/4 cup 2% milk
  • 1 large egg , lightly beaten
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1/2 cup mozzarella cheese
  • 1/2 cup Parmesan Cheese
  • 4.2 ounces pepperoni , (Half the pouch, cut into little quarters)
  • marinara sauce , for dipping

Instructions

  1. Preheat the oven to 375 degrees. In one bowl mix milk and eggs, set aside.
  2. In a second bowl mix flour, baking powder, salt, Italian seasoning, and crushed red pepper.
  3. Combine the wet into the dry ingredients and whisk to combine.
  4. Add in the pepperoni and cheese and whisk together.
  5. Spray baking spray or canola oil spray onto two mini muffin tins and using 1 tablespoon scoop, fill all 24.
  6. Alternately make 12 larger Pepperoni Pizza Bites.
  7. Cook for 15 minutes-18 minutes, or until browned.
  8. Serve with marinara sauce.
