Pepperoni Pizza Potato Skins

These Pepperoni Pizza Potato Skins taste like pizza on a potato and make a delicious kid-friendly party or tailgating appetizer.

Ingredients

Pepperoni Pizza Potato Skins
  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon or to taste kosher salt
  • 1 cup Pizza Sauce see recipe below
  • 1 cup shredded Italian blend cheese Mozzarella, Parmesan
  • 16 pepperoni slices
  • Chopped fresh parsley or cilantro for garnish optional
Pizza Sauce
  • 15 ounce can tomato sauce
  • 1 ounce can tomato paste
  • 1 teaspoon minced garlic 
  • 2 teaspoons Italian seasoning

Instructions

    Cup of Yum
  1. Preheat oven to 425 degrees F.
  2. Cover baking sheet with foil.
  3. Rub potatoes all over with olive oil and sprinkle all sides with salt.
  4. Place potatoes on baking sheet and cook for 1 hour. Please note that you may need to adjust the time based on your oven and the size of the potatoes. Larger potatoes may take longer.
  5. Remove the potatoes from the oven and let cool.
  6. Slice the potatoes in half lengthwise.
  7. Then spoon about 2 tablespoons of pizza sauce into each potato skin and spread it over the inside of the potato skin.
  8. Add about 2 tablespoons shredded cheese onto each potato skin.
  9. Then top each potato skin with 2 pepperoni slices.
  10. Bake in a preheated oven for about 10 minutes.
  11. Remove from oven and, if desired, garnish with either fresh parsley or cilantro.
  12. Enjoy!

  1. In a medium saucepan over medium heat, stir together tomato sauce, tomato paste, garlic, and Italian seasoning and cook for about 20 minutes, stirring frequently. Remove from heat and follow instructions above to include it in the Pepperoni Pizza Potato Skins recipe.
