Perfect Chicken Quesadilla Recipe

Ingredients
- 4 large tortillas
- 1/3 cup bell pepper , diced
- 1/3 cup red onion , dicd
- 1/3 cup chicken , cooked finely chopped
- 1 teaspoon chili powder
- 1 cup Cheddar, Pepper Jack or Monterey Cheese freshly shredded
- 2 tablespoons vegetable oil
Toppings:
- salsa Optional
- pickled jalapenos Optional
- sour cream Optional
- guacamole Optional
- crema mexicana
Instructions
- Dice chicken breast into small cubes. Spray a small frying pan with cooking spray. Cook chicken, combined with 1 teaspoon chili powder over medium heat. Continue to stir until fully cooked, approximately 5-7 minutes. Place on a paper towel lined plate to absorb any remaining moisture. Dice cooked chicken pieces even finer than before.
- In same small frying pan sprayed with cooking spray combine bell pepper and onion. Cook until both are soft, approximately 5-7 minutes. Remove from heat and set aside in a small bowl.
- In a large frying pan heat 1 tablespoons oil. Add one large tortilla, top with 1/4 cup cheese, 1/2 of the chicken mixture and 1/2 of the onion and bell pepper mixture. Cover with an additional 1/4 cup of cheese and top with a second tortilla, press down. Continue to fry until the bottom of quesadilla is browned and crispy. Using a large spatula and a fast hand, FLIP!
- Cook other side until browned and crispy.
- Remove to a cutting board and cut into quarters.
- Serve with jalapenos, salsa, guacamole and sour cream.
