Ingredients

  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1 clove garlic minced
  • salt and pepper to taste
  • 1/2 cup olive oil
  • 1 teaspoon fresh thyme leaves

Instructions

  1. In a bowl, whisk together the lemon juice, honey, mustard, garlic, and salt and pepper.
  2. Whisking constantly, slowly drizzle in the olive oil.
  3. Pull the thyme leaves off the stems and add them to the dressing. Taste the dressing and whisk in more salt, pepper, or lemon juice as needed.
