Ingredients

  • 4 thick-cut pork chops
  • 4 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper

  1. Rub 4 thick-cut pork chops with 4 tablespoon olive oil. Season all sides generously with 2 teaspoons salt and 1 teaspoon black pepper. Pork needs a heavy amount of salt to bring out the flavor. Salt with a heavy hand when it comes to a thick pork chop.
  2. Heat an oven-safe heavy skillet over high heat. Preheat oven to 400 degrees Fahrenheit.
  3. Sear the pork chops in the skillet for 2 minutes on each side.
  4. Transfer the skillet immediately to the oven and cook until the pork chop reaches an internal temperature of 145 degrees Fahrenheit, about 15 minutes.
  5. Let rest 5 to 10 minutes before serving.
