Perfectly Crispy Smashed Potatoes (Easy Air Fryer Recipe!)

Ingredients

  • 1 lb small potatoes I used a mixture of baby Yukon and red potatoes
  • 3 tbsp melted butter
  • 4-5 garlic cloves minced
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh thyme leaves plus extra for garnish

Instructions

  1. Place potatoes into a pot and fill with enough water to cover the potatoes; bring to a boil and cook 15-20 minutes, or until fork tender.
  2. While the potatoes cook, in a small mixing bowl combine the melted butter, garlic, thyme, salt, pepper, and grated parmesan cheese.
  3. Drain the potatoes and transfer to a cutting board; let rest for a few minutes to cool. Using the bottom of a glass, potato masher or the back of a fork, gently smash the potatoes until slightly flattened; about ½-inch to 1-inch thickness
  4. Spoon the garlic butter mixture all over the potatoes; transfer potatoes to the air fryer basket, leaving about an inch of space between each one.
  5. Cook at 400 degrees F for 10-12 minutes in air fryer (see notes for oven roasted timing and temperature), or until cooked to a desired crispiness. Garnish with additional fresh thyme leaves, if desired and serve.

Notes

  • If you do not have an air fryer, simply roast smashed potatoes in the oven at 420 degree F for 30-35 minutes, or until desired crispness.
