Ingredients

  • 2 bell pepper red
  • 1 red onion
  • 2 tablespoons vegetable oil
  • 4 cloves garlic
  • 2 lemon juiced and zested, plural
  • 1/2 cup white vinegar , divided
  • 5 small bird's eye chilies , stems removed
  • 1 tablespoon paprika
  • 2 teaspoons oregano dried
  • 2 bay leaf
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper coarse ground
  • 1/2 cup olive oil

Instructions

  1. Preheat oven to 450 degrees and line a baking sheet with foil.
  2. Cut bell peppers into 4 pieces and remove stem and seeds.
  3. Cut red onion into 8 wedges.
  4. Coat bell peppers and onions with vegetable oil.
  5. Cook in the oven for 20-25 minutes or until charred.
  6. Add cooked bell pepper and onion to a large high-powered blender with garlic, lemon juice and zest, 1/4 cup vinegar, chili peppers, paprika, oregano, salt, and black pepper.
  7. Puree until completely smooth.
  8. Add to a saucepan with the bay leaves on medium heat and bring to a simmer, then lower to medium-low heat.
  9. Cook for 25-30 minutes.
  10. Let cool for 15 minutes then add to blender again.
  11. Blend while adding olive oil and remaining vinegar in a slow stream.
  12. Spoon over chicken and serve.
