Ingredients
Tomato Topping:
- 1/2 1/2 cup grape tomatoes quartered
- 2 2 cloves garlic minced
- 1/4 1/4 teaspoon kosher salt more to taste
Chicken
- 1 1 tablespoon olive oil more if needed
- salt and pepper
- 4 4 boneless skinless chicken breasts see Note
- 4 4 slices mozzarella cheese
- 2 2 tablespoons basil pesto
- balsamic glaze
- optional shredded Parmesan
Instructions
- In a small bowl, combine the tomatoes, garlic, and salt. Let chill in the fridge.
- In a large skillet, heat the olive oil over medium heat. Cook the chicken breasts about 4-6 minutes per side until done. Place a slice of mozzarella on top of each chicken breast and cover to melt the cheese. Remove from heat.
- Add a 1/2 tablespoon of basil pesto on top of each slice of cheese and add the tomato mixture on top. Drizzle with the balsamic glaze and sprinkle with Parmesan.
Cup of Yum
Notes
- The chicken breasts should be thin. If they are thick (like the Costco frozen chicken breasts) slice them in half lengthwise. For this recipe, I use two Costco chicken breasts halved.
