Pesto Caprese Salad

This easy, fresh, clean pesto caprese salad gives you that taste of summer any time of the year.  In the summer I use fresh tomatoes from my garden which make it all the more mouthwatering.

Ingredients

  • 2 cups cherry tomatoes
  • 1 ½ cups cucumber peeled and cut in half moons
  • ½ cup red onion diced
  • 1 avocado
  • 1 cup small mozzarella balls
  • ½ cup pesto
  • Fresh ground sea salt and pepper to taste

Instructions

  1. Assemble all your ingredients and slice avocado.
  2. In a large bowl combine all the ingredients and stir to coat everything in the pesto evenly.
  3. Season the salad with fresh ground sea salt and pepper to taste.
