Pesto Couscous
Pesto couscous is a quick and easy side dish made with pearl couscous and basil pesto. Delicious hot or cold, this is a great dish for busy weeknights.
Ingredients
- 2 cups pearl couscous
- 4 tablespoons basil pesto
- 3 teaspoons lemon juice fresh
- ¼ teaspoon salt cooking
- 2 tablespoons Parmesan Cheese plus extra to serve, grated fresh
Instructions
- Cook pearl couscous in a large pot of boiling water according to the package directions.
- Drain couscous, then add to a large mixing bowl.
- Add basil pesto, lemon juice, parmesan and salt.
- Stir to combine then serve garnished with extra parmesan.
