Picadillo de Chayote

Picadillo is the ultimate Latino comfort food. It is a type of hash, usually prepared with ground beef, tomato, vegetables, herbs and spices.

Ingredients

  • ½ onion , chopped
  • ½ red bell pepper , chopped
  • 3 cloves garlic , chopped
  • 2 teaspoons dried oregano
  • 2 ears of corn , or 1 cup/200g of shelled corn (fresh or canned)
  • 4 chayotes , minced
  • 2 cups carne mechada (shredded beef)
  • 2 teaspoons ground annatto (achiote)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 tablespoons Lizano sauce (or Worcestershire sauce)
  • 1 cup beef broth
  • ½ bunch cilantro , chopped
  • 4 tablespoons vegetable oil

Instructions

  1. Sauté onion in a hot pan with oil.
  2. Add the bell pepper, garlic, oregano and continue to sauté for a couple minutes.
  3. Add corn and ½ cup (120ml) meat broth.
  4. Boil over medium heat for 5 minutes if using fresh corn. If using canned corn, you can skip.
  5. Incorporate chopped chayote, carne mechada (shredded beef) and ½ cup (120ml) of beef broth.
  6. Season with annatto, cumin, salt and Lizano sauce.
  7. Cover and bring to a boil.
  8. Cook over medium-low heat for about 40 minutes or until the chayote is tender.
  9. Add the cilantro.
  10. Serve with corn tortillas, white rice, beans or salad.
