Ingredients
For the pigs in blankets
- 200 g (7oz) brie (wheel of brie)
- 12 g pork sausages (chipolatas or mini sausages)
- 4 tbsp cranberry sauce or as needed
- 12 trips streaky bacon
For the dipping sauce
- 150 g cranberry sauce
- 2 tbsp wholegrain mustard (or others if preferred, such as honey mustard)
Instructions
- Cut your wheel of brie into small strips. You can slice the rind off or leave it on - up to you.
- Slice each sausage lengthwise without cutting all the way through. You just want to create space for the cheese and cranberry sauce filling.
- Place a spoonful of cranberry sauce into the sausage, filling the gap.
- Place one strip of brie lengthwise on top of the cranberry sauce in each sausage.
- Wrap each sausage in a strip of bacon.
- Combine the cranberry sauce and wholegrain mustard for the dipping sauce in a saucepan and heat for a couple of minutes to warm up.
- Preheat the air fryer to 180°C (350°F). Place a batch of prepared pigs in blankets in the air fryer basket in a single layer, leaving a bit of space around each one so the air can circulate.
- Air fry for 12-15 minutes, turning them at the halfway point. If you like you can glaze the sausages with the dipping sauce during the last minute of cooking though this is totally optional.
- Cook until the bacon is crisp. Repeat with the second batch of pigs in a blanket.
- Once they are well cooked, leave them to cool on a wire rack. Remember: the smell of air fryer bacon can be hugely tempting but there little piggies are very hot when them come out of the air fryer, so give them a minute or you risk burning your mouth!
Cup of Yum
Notes
- Cooking time may vary depending on how hot your air fryer runs, so keep an eye on them until they are golden brown. The sausage meat needs to be cooked through and you’ll want the crispy bacon to add texture to each delicious bite.
