Pikelet

The pikelet is a variant of pancake that is popular in Australia and New Zealand. It is similar to the traditional American pancake.

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ cup caster sugar
  • 1 egg , lightly beaten
  • ½ cup milk
  • 2 tablespoons butter , melted
To serve
  • strawberry jam
  • Whipped Cream

Instructions

  1. Sift the flour, baking powder and baking soda together in a bowl.
  2. Add the sugar.
  3. Dig a well in the center.
  4. Gradually add the egg and milk, then stir.
  5. Set aside for 15 minutes.
  6. Heat a large non-stick skillet over medium heat.
  7. Brush the bottom of the pan with melted butter.
  8. Depending on the size of the pan, pour 3 to 6 large spoons of batter, spacing them out so that you can spread them out.
  9. Cook for 1 to 2 minutes, until bubbles appear on the surface.
  10. Turn them over and cook for another minute, until golden.
  11. Brush the pan with a little melted butter between each batch of pikelets.
  12. Serve hot with strawberry jam and/or whipped cream.
