Pimento Cheese

Ingredients

  • 8 oz cream cheese at room temperature, package
  • ½ cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground cayenne pepper
  • ¼ teaspoon Old Bay seasoning
  • 8 oz cheddar cheese grated or 2 cups shredded, sharp, block
  • 1 Pimentos diced, drained, 4-oz jar

Instructions

  1. In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon salt, garlic powder, and cayenne pepper. Beat until smooth and evenly combined. Stir in grated Cheddar cheese along with the diced pimentos. Taste and adjust seasoning, if necessary.
  2. Transfer the spread to a serving bowl and serve with crackers and/or crudités. If serving later, cover and refrigerate for up to 5 days; bring to room temperature before serving.

Notes

  • Soften the cream cheese before mixing it with the other ingredients so that everything combines easily.
  • Using an electric mixer is the quickest and easiest way to combine the ingredients. You can do it by hand but it will take a little while longer to incorporate everything. On the plus side you'll give your arms a workout!
  • Do not leave the pimento cheese at room temperature for more than 2 hours or it can go off.
