Ingredients

  • 1 cup Pimento Cheese
  • 10 lices bread* , we like Sarah Lee Artesano
  • 10 lices peppered bacon , thick cut
  • 10 Romaine lettuce leaves
  • 2 heirloom tomatoes , or other good quality tomato, sliced

Instructions

    Cup of Yum
  1. Cook bacon. Add to a skillet over low heat and cook, turning often, until crisp on both sides. Remove to a paper towel lined plate.
  2. Assemble: Toast bread until golden. Spread bread slices with a layer of pimento cheese. Top with bacon, lettuce and tomato and apply top slice of bread to make a sandwich.

Notes

  • Bread: Use whatever high quality bread you like. For a convenient store-bought sandwich bread option, we like Sara Lee Artesano.
  • Pimento Cheese: make my fast homemade pimento cheese (or use good quality store-bought). You can even make my recipe up to 1 week in advance.
  • Gluten-free Adaptations: use gluten-free bread.
