Pimento Cheese Deviled Eggs

These Pimento Cheese Deviled Eggs are loaded with zesty flavor. The pimento cheese filling makes for a delicious twist on a classic recipe.

Ingredients

  • 12 hard boiled eggs cooled and peeled
  • 1/3 cup real mayonnaise
  • 1 cup shredded cheddar cheese
  • 2 teaspoons Dijon mustard
  • 4 ounces Pimentos drained and chopped
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • chives chopped

Instructions

  1. Slice the cooled hard boiled eggs in half lengthwise.  Remove the yolks from the eggs and place them in a mixing bowl.
  2. Place the egg yolks in a food processor.
  3. Add in the mayonnaise, dijon mustard, salt, pepper and garlic powder. Puree until smooth.
  4. Add in the cheese and diced pimentos (reserve some for topping) and plus to combine but do not completely puree.
  5. Carefully spoon or pipe the mixture into the center of each egg half.  Top with the paprika, reserved chopped pimentos and chopped chives.
  6. Refrigerate until ready to serve and enjoy!

Notes

  • Refrigerate the leftovers, covered, for up to 2 days.
