Pineapple and ginger mint julip
A refreshing take on a mint julip with pineapple, ginger and mint.

Ingredients
- 8 - 10 mint leaves
- 1 T sliced fresh ginger about 4cm piece
- 1/4 cup bourbon
- 3 Tbsp pineapple sugar syrup See details above on how to make this
- ice and crushed ice
- soda water or pineapple juice to top up optional
Instructions
- Put the mint, ginger, bourbon and pineapple sugar syrup into a cocktail shaker and muddle to release the aromatics. Add about 8 - 10 ice blocks and vigorously shake the drink.
- Strain over a glass of crushed ice, topping up with fresh pineapple juice or soda if you prefer.
- garnish with sprigs of fresh mint
