Pineapple and ginger mint julip

A refreshing take on a mint julip with pineapple, ginger and mint.

Ingredients

  • 8 - 10 mint leaves
  • 1 T sliced fresh ginger about 4cm piece
  • 1/4 cup bourbon
  • 3 Tbsp pineapple sugar syrup See details above on how to make this
  • ice and crushed ice
  • soda water or pineapple juice to top up optional

Instructions

  1. Put the mint, ginger, bourbon and pineapple sugar syrup into a cocktail shaker and muddle to release the aromatics. Add about 8 - 10 ice blocks and vigorously shake the drink.
  2. Strain over a glass of crushed ice, topping up with fresh pineapple juice or soda if you prefer.
  3. garnish with sprigs of fresh mint

Notes

  • This cocktail is best enjoyed freshly made.
