Pineapple Chicken

Pineapple Chicken combines bite-sized chicken breast pieces cooked with red bell pepper and pineapple chunks in a tangy, sweet sauce made from pineapple juice, soy sauce, hoisin, and spices. Ingredients

  • 3 chicken breast cut into 1 inch pieces, boneless skinless
  • 2 tsp vegetable oil
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 red bell pepper cut into 1 inch pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 Tbsp garlic minced
  • 1/2 tsp ground ginger
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup chicken broth
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 2 tsp cornstarch
  • 1 Tbsp sesame seeds
  • 2 green onions sliced

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the chicken and season it with the salt and pepper.
  2. Cook the chicken for 4-6 minutes stirring occasionally until the chicken is cooked through. Then add in the red bell pepper and pineapple and cook for 3-5 minutes until the pepper is tender.
  3. Then in a small bowl, combine the pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, minced garlic, ground ginger and cornstarch. Whisk until all the ingredients are thoroughly combined.
  4. Pour this mixture into the skillet and bring to a low simmer and cook for 1-2 minutes until the sauce has thickened. Remove from heat once the sauce has thickened to your prefer.
  5. Serve topped with the sesame seeds and green onions. Enjoy!

Notes

  • Chicken thighs can be used instead of breasts if preferred.
  • Serve the dish as is or over white rice.
  • Store leftovers in an airtight container and refrigerate for 5-7 days.
