Pineapple Coconut Shrimp Curry

Pineapple Coconut Shrimp Curry is a vibrant dish that blends fresh shrimp with colorful bell peppers, carrots, and onions in a rich sauce made from coconut milk, cream of coconut, pineapple juice, curry paste, and fresh lime. The combination creates a creamy, tangy curry with hints of sweetness from the pineapple, balanced by mild heat from curry spices. This dish works well served over white or brown rice and garnished with chopped peanuts and cilantro for texture and freshness.
