Pineapple Fried Rice

Ingredients

  • 300 grams CDO Holiday Ham
  • 4 cups leftover rice
  • pineapple tidbits
  • 1/4 cup green peas
  • 1/2 cup roasted cashew nuts
  • 2 bell pepper diced
  • 1/4 cup green onion chopped
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 egg
  • 5 tablespoons cooking oil
  • Salt and ground black pepper to taste

Instructions

  1. Beat the egg. Heat 2 tablespoons of cooking oil in a pan. Pour the beaten egg and fry until firm. Turn it over and do the same to the other side. Remove the egg and slice into smaller pieces.
  2. Heat oil in a pan. Saute garlic and onion.
  3. Add pineapple tidbits. Saute for 1 minute.
  4. Add CDO Holiday Ham. Continue sauteing for 2 minutes.
  5. Add bell pepper, cashew, and green peas. Stir.
  6. Add leftover rice. Toss and then stir fry for 1 minute.
  7. Pour soy sauce and add green onions.
  8. Season with salt and ground black pepper and then add sliced egg. Transfer the pineapple fried rice to a serving plate. Serve. Share and enjoy.
