Ingredients

  • 2 Tablespoon olive oil
  • 1 onion chopped
  • 1/2 red pepper chopped
  • 1 cup rice
  • 2 cups water
  • 2 cups ham cubed, cooked
  • 2 cups pineapple chopped
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1 Tablespoon lemon juice
  • 1 teaspoon ground mustard

Instructions

  1. Sautee the onion in the olive oil for 5 minutes. Add the red pepper and cook for 2 more minutes.
  2. Add all the remaining ingredients and bring to a boil. Cover, reduce heat and let steam for 25 minutes.
