Pineapple Ham and Rice

Ingredients
- 2 Tablespoon olive oil
- 1 onion chopped
- 1/2 red pepper chopped
- 1 cup rice
- 2 cups water
- 2 cups ham cubed, cooked
- 2 cups pineapple chopped
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1 Tablespoon lemon juice
- 1 teaspoon ground mustard
Instructions
- Sautee the onion in the olive oil for 5 minutes. Add the red pepper and cook for 2 more minutes.
- Add all the remaining ingredients and bring to a boil. Cover, reduce heat and let steam for 25 minutes.
