Pineapple, Mango, Coconut and Cashew Nut Smoothie

A delicious, tropical tasting smoothie with a hidden portion of spinach, giving it a wonderful green colour, this Pineapple, Mango, Coconut and Cashew Nut Smoothie makes a great quick and healthy breakfast or mid-afternoon pick me up!

Ingredients

  • 2 big handfuls of spinach
  • 2 small handfuls frozen mango chunks
  • 2 small handfuls fresh pineapple (approx. two slices, skin chopped off and diced)
  • 2 small handfuls cashew nuts
  • 1 medium banana peeled and cut in half
  • 500 ml coconut milk (I like Rude Health Coconut Drink)
  • Juice of 1 lime

Instructions

    Cup of Yum
  1. Place all the ingredients into in a high speed blender or smoothie maker and whizz until smooth.
  2. Pour into a glass and enjoy!!

Notes

  • This serving would do two for breakfast or four if it was a snack or a dessert.
  • Not suitable for freezing.
