Ingredients

  • 15 wonton wrappers
  • 15 ounces ricotta cheese drained of excess liquid overnight if possible
  • 1/3 cup plain greek yogurt low fat or whole can also be used
  • 1 teaspoon orange zest
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract optional
  • Mini chocolate chips and chopped pistachios for toppings

Instructions

  1. Preheat oven to 350° F. and spray a muffin pan with cooking spray. Place one wonton wrapper in each muffin cup and bake for 7-10 minutes or until lightly browned. Remove from oven and cool completely on a wire cooling rack.
  2. In a medium sized bowl or in the bowl of an electric mixer, whisk together all of the ingredients except the chocolate chips and pistachios. Divide the filling into the cooled wonton cups and top with mini chocolate chips and chopped pistachios.

Notes

  • The wonton cups can be made in advance and stored in an airtight container. Don't fill them until ready to use or the filling will make them soft.
