Pistachio Rice Krispie Treats with Dark Chocolate Recipe
Made with pudding mix and drizzled with dark chocolate, these are not your everyday Rice Krispie Treats! Try this pistachio dessert that puts a new twist on your childhood favorite.

Ingredients
- 6 Tablespoons salted butter
- 16 ounce bag mini marshmallows, divided
- 3.5 ounce box instant pistachio pudding mix
- 1 teaspoon pure vanilla extract
- 6 cups Rice Krispies cereal
- ½ cup dark chocolate melted
Instructions
- In a large pot, melt butter over medium heat. Add all but 1 cup of the mini marshmallows and continue stirring until completely smooth. Remove from heat.
- Add dry pistachio pudding mix and vanilla extract. Fold in with spatula. Add in cereal and remaining 1 cup of mini marshmallows. Mix completely.
- Pour into a parchment paper lined 9-inch square baking dish. Allow treats to cool and set at least one hour. Remove from dish, remove parchment paper. Cut into 16 squares.
- Drizzle with melted dark chocolate, allow to set, about 15 minutes. Enjoy (these are great in the fridge)!

Notes
- To create a pretty topping for these Rice Crispy Squares without any lumps or clumps, dip a fork in the melted chocolate and tap off any excess. Then, drizzle the dark chocolate evenly over each bar.
- I like to store these chocolate covered treats in an airtight container or ziploc bag at room temperature.
