Pita Bread

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 3/4 teaspoon sugar
  • 1 cup water 110°F, lukewarm
  • 3 cups all-purpose flour
  • 1 1/4 teaspoons kosher salt
  • 3 tablespoons extra virgin olive oil

Instructions

  1. In a large mixing bowl, dissolve yeast and sugar in lukewarm water. Add 1/2 cup flour and whisk to form a loose mixture. Let sit in a warm place for 15 minutes until bubbly.
  2. Add the salt, olive oil, and remaining flour to the yeast mixture, stirring until the ingredients come together into a rough, sticky dough. Knead briefly in the bowl to incorporate any loose bits.
  3. Transfer dough to a lightly floured surface and knead until smooth, about 10 minutes. Let rest for 10 minutes, then knead again for a few minutes. Place in an oiled bowl, cover, and let rise until doubled, about 1 hour.
  4. Deflate the dough and divide into 8 pieces. Shape each into a ball and let rest for 10 minutes. Roll each ball into a circle, 8-9 inches wide. Bake in a preheated oven at 475°F on a hot baking sheet for 2 minutes on one side and 1 minute on the other.
