Pita Pizza with Spinach, Mushrooms, Onions, and Fresh Tomatoes

Ingredients

  • 1 tbsp olive oil
  • Handful of button mushrooms sliced
  • 1 cup baby spinach
  • Pinch of Crushed Red Pepper Flakes
  • Sea Salt and Freshly Cracked Pepper to taste
  • 1 clove of garlic minced
  • 1 whole wheat pita
  • marinara sauce to taste
  • mozzarella cheese to taste
  • sweet yellow onion sliced thinly, to taste
  • fresh tomato sliced

Instructions

  1. Preheat the oven to 400 degrees. Coat a baking sheet with a bit of cooking oil.
  2. Heat the olive oil in a small skillet over medium heat. Add the mushrooms and cook, stirring occasionally, for 3-4 minutes.
  3. Add the spinach, crushed red pepper flakes, sea salt & freshly cracked pepper, to taste, and minced garlic. Cook, stirring constantly, for 1 minute. Remove from the heat.
  4. Spread the desired amount of marinara on top of the pita then sprinkle with mozzarella cheese. Spread the sautéed mushrooms and spinach evenly over the pizza. Add the raw onion slices.
  5. Place into the oven and bake for 8-10 minutes, until golden brown and the cheese is melted.
  6. Remove from the oven and top with fresh tomato slices. Slice & serve immediately. Enjoy.
