Piyaz

Piyaz is one of the main mezes in Turkish cuisine. It is a salad that is prepared with white beans, onion, spices and herbs.

Ingredients

  • 1 lb White beans drained net weight, canned
  • 4 tomato peeled, seeded and diced
  • 1 small bunch flat leaf parsley chopped
  • 3 scallions , cut into thin strips
  • 1 teaspoon paprika powder
  • ¼ teaspoon red hot peppers pul biber, crushed
  • ½ teaspoon sumac
  • 4 egg hard-boiled
  • black olives
  • salt
For the sauce
  • ½ cup extra virgin olive oil
  • 1 tablespoon vinegar
  • 1 lemon , freshly squeezed
  • salt

Instructions

  1. Mix all the ingredients.
Salad
  1. Rinse the white beans and drain them well.
  2. In a large bowl, place the white beans, tomatoes, onions, and half the parsley.
  3. Add paprika, chili, and sumac.
  4. Add the sauce and mix well.
  5. Cut the boiled eggs in half or in slices and place them on top.
  6. Garnish with black olives and sprinkle with remaining parsley.
  7. Serve fresh.
