Ingredients

  • 10 plums halved and pitted
  • ¼ cup brown sugar or more
  • 1 to 2 pinches cinnamon
  • 3 tablespoons maple syrup or more

Instructions

    Cup of Yum
  1. Preheat oven to 400F.
  2. Lightly grease a baking dish or spray with non-stick spray. The baking dish should be large enough to hold the plums without overlapping. Use two baking dishes if you need to.
  3. Place plum halves cut side up in the baking dish.
  4. Sprinkle the tops of the plums with sugar and cinnamon, then drizzle with maple syrup.
  5. Bake plums for 15 to 20 minutes until tender and soft. Super ripe plums will take less time.
  6. Remove the baking dish from the oven and let the plums cool enough to be able to peel the skin off.
  7. Transfer the peeled plums and the liquid from the baking dish to a high-powered blender and blend until smooth.
  8. Add additional maple or cinnamon to taste if desired. Use immediately or transfer to an airtight jar and store in the fridge until ready to use.
