Pollo Fundido
These burritos are filled with seasoned, shredded chicken and then baked. Just before serving, cover them in smooth, silky creamy cheese sauce. So delicious and mouth-watering, one won't be enough!

Ingredients
- 3 cups chicken cooked and shredded, rotisserie is great
- 1 ounce taco seasoning
- 4 ounces cream cheese
- 6-8 large flour tortillas burrito-size
Fundido Sauce
- 4 ounces cream cheese
- 4 ounces Velveeta cheese or American
- 4 Tablespoons milk
- 3 tablespoons diced green chilis to taste
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 Jalapeño sliced, optional
Instructions
- Pull out and measure the ingredients.
- Preheat the oven to 400° and spray a cookie sheet with cooking spray.

Burritos
- Combine the chicken, taco seasoning and the cream cheese in a bowl until well combined. Heat the tortillas for 20 seconds in the microwave.
- Split the filling between the tortillas
- Then fold one side over.
- Fold each of the sides in.
- Use spoon to assist if needed.
- Roll up the burritos.
- Place seam side down on the pan and place in the oven.
Fundido Sauce
- In a microwave-safe bowl, combine the cream cheese, Velveeta, milk, green chilis, garlic powder and onion powder.
- Place in the microwave and heat for 1 minute. Stir until melted and smooth. You may need to continue heating for 30 second intervals until the cheese is thoroughly melted and combined.
- Bake for 15 to 20 minutes until the tortillas are lightly-browned and crispy.
- Remove from the oven and place on a serving platter.
- Just before serving, pour cheese sauce over the burritos. Top with sliced jalapeños if desired.
- Serve.

- Tips:
- Rotisserie chicken is a quick and convenient way of making this easy meal. But you can cook your own chicken. Breast or thighs if you wish. If you wish, double the filling and make the burritos even fuller.
