Ingredients

  • 2 pounds chicken thighs cut into chunks, boneless, skinless
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper ground
  • 2 tablespoons olive oil
  • 1 onion diced, large
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 4 cloves garlic minced
  • 1 teaspoon oregano dried
  • 1/2 teaspoon cumin ground
  • 2 bay leaf
  • 8 ounces tomato sauce
  • 2 cups chicken broth low-sodium
  • 1 carrot sliced, large
  • 1 potato peeled and cubed, large
  • 1/4 cup green olives sliced, pitted
  • 1/4 cup cilantro chopped (for garnish, fresh

Instructions

  1. Season the chicken with salt and pepper.
  2. In a large pot, heat olive oil over medium heat and brown the chicken on all sides, then remove and set aside.
  3. In the same pot, sauté onions, bell peppers, and garlic until softened.
  4. Stir in oregano, cumin, and bay leaves, cooking for another minute.
  5. Add tomato sauce and chicken broth, then return the chicken to the pot.
  6. Bring to a simmer, then add carrots and potatoes, and cook covered for 30 minutes.
  7. Uncover, add olives, and simmer for an additional 15 minutes, or until the stew thickens and vegetables are tender.
  8. Remove the bay leaves, garnish with cilantro, and serve hot.
