Ingredients

  • Five cups of Spring Mix salad
  • 2 apples Fuji or Gala cored and sliced (drizzle with the juice of half a lemon to prevent browning)
  • 1 cup pomegranate seeds
  • 1 package cooked beets sliced (Trader Joe's sells them)
  • 1 Tablespoon orange zest
  • ½ cup fresh squeezed orange juice 2-3 large oranges
  • 2 Tablespoons extra virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Prepare salad using spring mix, apples, pomegranate seeds, and beets.
  2. Mix remaining ingredients into a dressing, and drizzle over salad.
