Pomegranate Citrus Salad
The most perfect citrus salad with pops of fresh pomegranates and a savory vinaigrette to bring it all together!
Ingredients
- 2 navel orange
- 2 orange Cara Cara variety
- 2 pink grapefruit
- 2 tangerines
- 3 mandarin orange
- 2 blood oranges
- 2 avocado cut into wedges
- ½ cup pomegranate seeds
- salt Kosher salt and freshly cracked, to taste
- black pepper Kosher salt and freshly cracked, to taste
For the Citrus Vinaigrette
- 2 lemon juiced
- 3 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 1 shallot finely chopped
- 2 cloves garlic finely chopped
- salt Kosher salt and freshly cracked, to taste
- black pepper Kosher salt and freshly cracked, to taste
Instructions
- Carefully slice the peel off the citrus. Cut the citrus into slices and carefully pop out any seeds. Arrange the citrus and avocados on a platter and season with salt and pepper. Sprinkle with pomegranate seeds.
- Whisk together the ingredients for the vinaigrette, taste and adjust salt and pepper as needed. Serve the vinaigrette drizzled on top of the salad and serve immediately
Notes
- Don't skip the avocado or pomegranate - they add so much with their opposing textures.
