Pomegranate Guacamole

Ingredients
- 4 Hass avocados Ripe
- 1/2 cup diced red onion
- 1 lime
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped cilantro
- 1/2 cup pomegranate arils
- 1/3 cup chopped walnuts
- 1/4 cup crumbled Feta cheese
Instructions
- Start with cutting the avocados in half and remove the pit. Take out the flesh using a spoon and place in a bowl.
- Using a fork, mash the avocado.
- Add in diced red onion and mix.
- Squeeze the lime and add the juice to the avocado and red onion.
- Add in salt, pepper and cilantro.
- Place a plastic wrap on the surface of the guacamole and refrigerate for 15-30 minutes. (You can skip this step if the avocados are cold.)
- To serve, top the guacamole with pomegranate arils - see how to cut a pomegranate here, walnuts, crumbled feta cheese and some chopped cilantro.
- Serve with tortilla chips.

- Guacamole is better be served and eaten on the same day, but you can deseed the pomegranate the day before.
