Pomegranate White Chocolate Cookies

These are sweet, chewy White Chocolate Cookies with pomegranate arils mixed in. Make these for teachers, loved ones or keep all to yourself.

Ingredients

  • 1/2 cup butter softened {such as Land O'Lakes}
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all purpose flour
  • 1 cup pomegranate arils
  • 1 cup white chocolate chunks or chips

  1. Preheat oven to 350 degrees F.
  2. Bring butter to room temperature. I used Land O’Lakes salted butter. To make your butter warm up faster, cut into smaller pieces.
  3. Whip together butter and sugar until light and fluffy.
  4. Stir in an egg and vanilla.
  5. Be sure to scrape the bottom and whip again so everything comes together evenly.
  6. Add in dry ingredients and stir.
  7. Add pomegranate arils.
  8. Scoop cookie dough onto baking sheets and put into preheated oven for 10-12 minutes.
  9. While cookies bake, melt white chocolate in microwave or in broiler. Drizzle it over cookies.
