These are sweet, chewy White Chocolate Cookies with pomegranate arils mixed in. Make these for teachers, loved ones or keep all to yourself.

Ingredients
- 1/2 cup butter softened {such as Land O'Lakes}
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all purpose flour
- 1 cup pomegranate arils
- 1 cup white chocolate chunks or chips
Instructions
- Preheat oven to 350 degrees F.
- Bring butter to room temperature. I used Land O’Lakes salted butter. To make your butter warm up faster, cut into smaller pieces.
- Whip together butter and sugar until light and fluffy.
- Stir in an egg and vanilla.
- Be sure to scrape the bottom and whip again so everything comes together evenly.
- Add in dry ingredients and stir.
- Add pomegranate arils.
- Scoop cookie dough onto baking sheets and put into preheated oven for 10-12 minutes.
- While cookies bake, melt white chocolate in microwave or in broiler. Drizzle it over cookies.
