- 2 cups white long grain rice uncooked
- 1 tablespoon unsalted butter
- 2 cans red beans do not drain
- 1/4 cup water
- 1/2 teaspoon garlic salt or more to taste
- 1/4 teaspoon onion powder
- 1 teaspoon creole seasoning
- 1/4 teaspoon liquid smoke
Instructions
- In a large saucepan, bring 4 cups of water to a boil. Add the rice and butter and reduce to a simmer. Cover the saucepan and cook for 15-20 minutes or until the rice is cooked.
- Empty the beans and the liquid from the can into a large pot. Use a potato masher to crush some of the beans, ensuring that most are left whole.
- Add the water, garlic salt, onion powder, creole seasoning, and liquid smoke to the beans. Stir to combine.
- Simmer over medium-low heat for about 15 minutes or until the beans start to soften. Stir the mixture occasionally to ensure that the beans don’t stick.
- Transfer the beans to serving bowls and top with a scoop of rice.
