Poppy Seed Dressing

Poppy seed dressing is an underused but incredibly delicious dressing, perfect for all kinds of different recipes.

Ingredients

  • 1/2 cup olive oil (or avocado oil)
  • 1 small shallot (microplaned)
  • 3 tablespoons red wine vinegar
  • 3 tablespoons white sugar
  • 1/2 teaspoon dry mustard ground
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon salt

Instructions

    Cup of Yum
  1. Add all ingredients to a jar with a tight fitting lid and shake well. Or add to a bowl and whisk.
  2. Add a bit more sugar and vinegar to taste.
  3. Serve.

Notes

  • Add 1-2 tablespoons of mayonnaise to make a creamy dressing.
  • Store in the fridge for up to 14 days. The dressing tends to separate as it sits, but just shake it up before using.
