Poppy Seed Fruit Salad

This Poppy Seed Fruit Salad is sweet with a bright citrus flavor and a little bit of ginger.

Ingredients

  • 8 8 cups mixed cubed fresh fruit (any kind: pineapple, apples, berries, oranges, or grapes)
  • 3 3 tablespoons fresh orange juice
  • 3 3 tablespoons honey
  • 1 1 tablespoon fresh lemon juice
  • 1 1 teaspoon poppy seeds
  • 1/2 1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
  • optional 1-2 tablespoons sugar (see Note)

Instructions

  1. Put fruit in a large bowl.
  2. In a Mason jar or a small bowl, combine the orange juice, honey, lemon juice, sugar (if needed), poppy seeds, and ginger. Shake (or whisk) well. Pour half of the dressing over the fruit and toss. Drizzle the remaining dressing over and serve immediately.

Notes

  • Depending on the time of year and what fruit is in season, you may or may not need to add sugar to sweeten your fruit. You definitely don't need it if your fruit is very ripe.Source: Add a Pinch Cookbook; with permission from the author and publisher to post this recipe.
