Ingredients

  • 3/4 cup milk whole
  • 1 1/4 cups sugar
  • 1/2 cup vegetable oil
  • 2 large egg
  • 1 tablespoon poppy seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 cups flour
  • 3/4 teaspoons baking powder
  • 1/2 teaspoons salt

Instructions

  1. Preheat oven to 350 degrees and line a muffin tin with muffin liners.
  2. In a large bowl whisk together milk, sugar, oil, eggs, poppy seeds, vanilla extract, and almond extract.
  3. Sift together flour, baking powder and salt then add to the wet ingredients and whisk until combined.
  4. Scoop batter into muffin liners (an ice cream scoop works well for this).
  5. Bake for 20-22 minutes until a toothpick comes out clean.
