Pork and Sauerkraut Skillet

Easy and succulent, this recipe uses smoky kielbasa for the pork. Precooked and flavorful, it is the BEST pork and sauerkraut recipe out there!

Ingredients

  • 1 large russet potato , peeled and cut into small cubes
  • 1 teaspoon vegetable oil
  • 1 small onion , thinly sliced
  • 1 pound kielbasa , sliced in 1/4 inch pieces
  • 1 1/2 cups Sauerkraut , rinsed and drained
  • 1 tablespoon brown sugar
  • 1/4 cup apple juice
  • 1/4 teaspoon coarse kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat and add the potato. Saute the potato until the pieces start to turn translucent and brown on the edges, about 5 minutes.
  2. Add the onion and kielbasa. Toss until kielbasa browns and onion softens, about 5 minutes.
  3. Stir in the rinsed and drained sauerkraut, apple juice and brown sugar, mixing until combined. Reduce to a low and simmer for 10-12 minutes.
  4. Season with the salt and freshly ground black pepper.
  5. Serve immediately.

Notes

  • I use apple juice for the liquid, but you can also use chicken stock, plain water or even dry white wine.
