Pork Chop and Stuffing Skillet

This easy skillet meal combines pork and stuffing in a one dish dinner.

Ingredients

  • 1 tablespoon cooking oil
  • 4 thin bone in pork chops
  • salt and pepper to taste
  • 6 ounces turkey or chicken sausage
  • 1 red pepper chopped
  • 1 onion chopped
  • 1 apple peeled and chopped
  • 2 Stalk of Celery sliced
  • 1 box stuffing mix
  • 1 1/4 c. water

Instructions

  1. Preheat the oven to 350 F.
  2. Heat an oven proof skillet over medium heat.
  3. Sprinkle the pork chops with salt and pepper.
  4. Add the corn oil to the skillet and brown the pork chops for about 2 minutes on each side, until they are lightly brown.
  5. Remove the pork chops, cover and set aside to keep warm.
  6. Add the sausage to the skillet and stir until it is no longer pink.
  7. Add the red pepper, onion, apple and celery to the skillet with the sausage cook for 5 minutes to soften the vegetables.
  8. Remove the skillet from the heat. Add stuffing mix and water and stir until well mixed.
  9. Arrange the pork chops on top of the stuffing mix, cover the skillet with foil and bake for 10-15 minutes, until pork chops are cooked through and no longer pink.
