Pork Fajitas

These easy pork fajitas are bursting with all your favorite Mexican flavors! The lean pork, fresh peppers and onions, fajita seasonings, and soft tortillas will have you coming back for more!

Ingredients

  • 1 1/2 pounds pork tenderloin, sliced thin
  • 3 tablespoons olive oil
  • 4 tablespoons Homemade Fajita Seasoning (or store-bought)
  • 2 cups bell peppers, sliced (any color combination)
  • 1/2 Cup Purple Onion, sliced
  • flour tortillas (for serving)

Instructions

  1. In a medium-sized bowl, add the sliced pork, olive oil, and fajita seasoning. Stir to coat the meat well.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the sliced pork and cook for 8-10 minutes or until cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil, sliced onions, and sliced peppers. Cook for about 5 minutes until the onion is caramelized and the peppers are soft.
  4. Add the pork back to the skillet, and stir in with the onions and peppers. Cook for an additional 3 minutes, or until they are all warmed through together.
  5. Serve with warm tortillas and toppings of your choice!
